Make a Shanghai Fried Rice

This is the recipe for Shanghai fried rice. Discussion about Filipino fried rice will be done later. This is Chinese style of cooking. Ingredients

  • 1 kilogram (6 cups) cooked rice or less
  • 250 grams Chinese sausage (chorizo bilbao)
  • 200 grams (1 1/3 cups) green peas (freshest green peas only)
  • 100 grams (1 1/3 cups) lettuce
  • 150 grams (5.3 ounces) shrimp or more
  • Soy sauce
  • white pepper (optional)
  • 5 pieces of eggs
  • 100 grams (1 cup) spring onions
  • Garlic
  • Onion
  • Monosodium glutamate (MSG) (optional if you have allergies)
  • Salt

Steps

  1. Fluff and spread the cooked rice on a baking tray, let it cool.
  2. Chop the garlic finely.
  3. Chop the spring onion.
  4. Cut the Chinese sausages into thin discs.
  5. Fry the scrambled eggs and cut into strips.
  6. Slice the lettuce into strips
  7. Using a Chinese wok, heat oil.
  8. Add garlic, onion and shrimps for the sauté.
  9. Add the strips of scrambled egg and stir well.
  10. Then add the green peas, lettuce, salt and white pepper or MSG.
  11. Add soy sauce and spring onions, stir well to evenly distribute the ingredients.

Tips

  • You can use other non - msg flavor enhancers.
  • If you're not allowed to use monosodium glutamate the add {{safesubst:#invoke:convert|convert}} of sugar.

Warnings

  • Be aware that some people are allergic or sensitive to MSG. If you are one of those people, or suspect you are, replace it with other seasonings.
