Make Starbucks Classic Coffee Cake

This is a nice delightful cake that brings back many good memories.

Ingredients

Topping (Crumble)

  • 1 cup (125g) all- purpose flour
  • 1 cup (220g) light brown sugar, packed
  • 1/2 cup (1 stick or 115g) butter, softened
  • 1/2 cup chopped pecans or another nut (optional)
  • 1/2 cup of peanut butter of your choice (optional)

Batter

  • 1/2 cup (100g) granulated sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon baking powder
  • 1/3 cup (80 ml) milk
  • 1 cup (2 sticks or 230g) butter, softened
  • 3/4 cup (165g) light brown sugar, packed
  • 1 cup (125g) flour

Steps

  1. Preheat your oven to 325ºF or 165ºC.
  2. Combine the flour, brown sugar, softened butter, pecans, and 1 teaspoon cinnamon in a medium bowl. Mix until it has a sandy texture.
  3. In a large bowl, cream 1 cup butter, light brown sugar and 1/2 cup sugar with an electric mixer until fluffy. After add eggs and vanilla.
  4. In another bowl combine flour and baking powder. Add this mixture to the fluffy mixture stirring in a little at a time. Add milk and mix until consistent.
  5. Pour the batter into a 10x10 inch baking pan that has been buttered and dusted with flour.
  6. Sprinkle the mixture, which should look like sand, over the batter. Make sure it covers the top of the batter
  7. Bake the cake for 50 minutes, or until the edges begin to turn light brown. Cool and serve.
  8. Finished.
