Cook Cassava Suman

Cassava Suman is a Filipino rice cake made from the Cassava (Manioc) tuber. It is very easy to make, and provides a hearty snack option for the food-lover. This recipe yields about 12 medium sized cassava sumans.

Steps

  1. Assemble the ingredients. You will need:
    • 1 cup coconut milk
    • 2 cups grated cassava
    • 3/4 cup sugar
    • 1 cup grated young coconut
    • 12 Blanched banana leaves (these serve as wrappers)
  2. In a pot, cook grated cassava and coconut milk until thick.
  3. Add sugar and grated young coconut.
  4. Place about two tablespoons of the mixture in a banana leaf and wrap.
  5. Steam for about 30 minutes or until well cooked.
  6. Drain when done. You can either serve the sumans warm or chilled.

Tips

  • To test for done-ness, you can employ a method used in baking. Gently poke a suman with a toothpick. If nothing sticks to the toothpick after being withdrawn, then your suman is done.
