Cornmeal porridge is also known as Jamaican porridge, Pop or Cog. It originated in Northern Europe and was introduced to the islands by British colonizers. It is a popular dish in Jamaica, enjoyed by infants to elders for breakfast, lunch and dinner. Spiced with vanilla, nutmeg and cinnamon, this hot porridge is considered to be a genuine comfort food. Cornmeal porridge is both inexpensive and filling. Follow these steps and learn how to make cornmeal porridge.

Ingredients

  • 1 cup (236 ml) cornmeal
  • 1 cup (236 ml) water
  • 1 cup (236 ml) milk
  • 3 cups (709 ml) water
  • 1/2 cup (118 ml) sweetened condensed milk
  • 1/4 tsp cinnamon

Steps

  1. Pour 1 cup (236 ml) of cornmeal into a bowl.
  2. Add 1 cup (236 ml) of water to the cornmeal and stir well.
  3. Mix together 1 cup (236 ml) of milk and 3 cups (709 ml) of water in a medium saucepan.
  4. Heat on medium until boiling.
  5. Reduce the heat to low and stir in the cornmeal mixture. Whisk continuously for approximately 3 minutes to avoid lumps.
    • The cornmeal might splatter if the heat is too high.
  6. Allow to simmer for approximately 7 additional minutes, stirring frequently.
  7. Stir in 1/2 cup (118 ml) of sweetened condensed milk.
  8. Season as desired.
  9. Mix well.
  10. Allow to simmer for an additional 5 minutes.
  11. Serve hot.

Tips

  • An alternative version of this recipe can be made by reducing the 3 cups (709 ml) of water to 2 cups (472 ml) making the finished product much thicker. Store it in the refrigerator until it is cool, then form it into patties and fry them in butter or oil for a crispy, chewy treat.
  • You can substitute half and half or coconut milk for the milk in this cornmeal porridge recipe. Half and half will make your porridge creamier and both can add richer flavor.
  • To add a bit of sweetness to your homemade cornmeal porridge, try adding 2 tbsp. (30 ml) of granulated sugar, brown sugar or honey. Sugar substitute can also be used. Just make sure to check the package label for the appropriate amount that would be equal to 2 tbsp. (30 ml) or to your taste.
  • For a different texture, toss in a handful of raisins, dried bananas or dried cranberries. A few pecans or walnuts can add some crunch to your porridge. Fresh blueberries or strawberries might make a nice addition, as can shredded coconut.
  • For a more savory dish, try adding butter, cheese, herbs, salt and/or pepper.
