Prepare Spicy Potato Bhaji

The potato is a multifaceted food stuff which can be consumed raw or used in a variety of dishes. The following recipe will show you how to create a delicious potato bhaji to go along with bread-sticks or Chapati(Indian flat bread)

Ingredients

  • 4-5 Large potatoes 
  • 1 small red onion, finely chopped 
  • Ginger-Garlic Paste 
  • 2-3 green chillies,finely chopped
  • 1 medium sized tomato , diced  
  • 1/4 tsp turmeric powder 
  • 1/2 tsp coriander powder 
  • 1/2 tsp cumin powder 
  • 1/2-1 tsp red chili powder 
  • 1/4 tsp Garam Masala powder
  • Coriander leaves 
  • Mustard seeds 
  • Cumin seeds 
  • Curry leaves 
  • Chicken/Vegetable Maggie stock 

Steps

  1. Peel potatoes and boil them in a vessel full of water. Add a few pieces of  chicken or vegetable stock.
  2. When the potatoes are soft enough, drain and keep aside. Don't throw the water. Store it in a large bowl.
  3. Add oil/butter in another vessel.
  4. Sprinkle some cumin seeds,mustard seeds and curry leaves.
  5. When the cumin starts turning brown, add the  onions, green chillies and few spoons of ginger-garlic paste and sauté well.
  6. When the onions have turned soft and brown, add the tomatoes and sauté well.
  7. Add the spices and stir well.
  8. Add the water used to boil the potatoes just enough to make the mixture thick.
    • Keep stirring the mixture for few minutes.
  9. Add the boiled potatoes. Sprinkle salt as required and mix well.
  10. Sprinkle a few coriander leaves on top.
  11. Serve with bread sticks or Chapathi.

Tips

  • Use tomato puree if you run out of potatoes.
  • If you don't have Ginger-Garlic paste, then you can mash 6-7 cloves of garlic and a small piece of ginger in a mortar and pestle it.
  • If you are in a hurry and have forgotten to boil the potatoes, then repeat steps from 3 to 6 and add lit bit of more water in order to boil the potatoes with the ingredients.

Warnings

  • Don't make it too spicy as spicy food is not good for health and may cause mouth ulcers.
