A very cute treat and twist to brighten up a classic sandwich, these "sushi rolls" are perfect in a child's lunch box (or bento) or for a birthday party. Makes 1 "roll" or 8 pieces

-Before preparing this snack hands must be washed

-Preparation area must be clean and dry

Ingredients

  • 2 tablespoons creamy peanut butter
  • 2 tablespoons strawberry jam, jelly, or preserves
  • 2 slices bread

Steps

  1. Cut the crusts off from the bread slices.
  2. Use a rolling pin to flatten the slices completely. You may also use a large soup can instead of a pin.
  3. Take a bread slice and spread one tablespoon of strawberry jam/jelly and peanut butter evenly. Repeat with the second bread slice.
  4. Roll each slice tightly, so it resembles a small, good-sized spiral.
  5. Use a knife to cut each "roll" into four equal pieces. Use a very sharp knife to avoid pinching the roll.
  6. Arrange on a plate and enjoy.

Tips

  • Try any other "spread", such as margarine (oleo), honey, mayonnaise, and other flavors of jellies to create your own unique sandwich "sushi".
  • Adding cucumbers, carrots, or even small blocks of banana or cheese sticks can add enjoyable imagination to healthy sandwiches. Vegetables like carrots and cucumbers can normally be found in regular Japanese sushi.
  • You could also use dental floss (non-flavored) to cut - just make one loop around the roll up, hold the roll steady, and pull both ends of the dental floss.
  • To add some "crunch" to it, place the rolls in the freezer for a few minutes before cutting it.
  • If you don't want to flatten white bread, try using sandwich wrap or flat bread.
  • A taco sized tortilla can be used in place of the bread slice.
