Cucumbers are a versatile vegetable, that can be prepared and eaten, or used in many different ways. There are also varieties of cucumbers, that are used differently. The smaller ones are used for making pickles. The larger, and longer and smoother skinned cucumbers are used for salads, but also can be enjoyed just eating them as is, either sliced, diced, or just holding them and biting into them. They can be taken to picnics or beaches, as they do not spoil in the heat. Add olives to a cucumber, tomato salad, and perhaps anchovies, for more of a Greek salad, of course adding Feta Cheese to make it more authentic. Remember to not remove the skin when making pickles.

Steps

  1. Wash the cucumber when you take it home from the store if you are going to eat the cucumber with the skin attached. Even though it is shiny and clean looking, it has been handled, and will be unclean. If you are removing the skin, then you do not have to wash it, but wash your hands after you finish removing the skin.
  2. Enjoy making a tomato cucumber salad that can be served as a side dish for almost any type of meal.
  3. Create a delicious and enjoyable soup from the cucumbers. Add any type of spices that you enjoy, and serve it cold on a hot summer day, or hot at other times.
  4. Grate the cucumber, as you might find it in a Thai restaurant, served with sweet and sour dressing.

Tips

  • For easy removing of the skin, use a potato peeler.
  • The skin can be eaten, but must be washed first.
  • If you are planning to puree cucumbers to use in a sauce, be sure to use the seedless variety or to remove the seeds. They will create a bitter taste.
  • Try to buy organic vegetables, if possible but since they are very expensive, you might want to just buy regular cucumbers

  • Make sure to take to take small bites so you don't choke.
